Roasted Strawberry, Coconut & Lime Icy Pops
After an unprecedented heat wave that was upon us this Month of March in Melbourne, and receiving these icy pop molds as a gift from my sister, I have been toying with the idea of creating a an icy pop recipe that is free from all kinds of added sugar. As this is my sixth week of not eating added sugar, I decided that a cup of chai after dinner was not quite cutting it for me anymore.
Coconut milk is currently quite prevalent in my diet, so it was a prefect choice for the base of these icy pops. Strawberries were the second no brainer ingredient. They are one of my favourite fruits and flavours, not to mention I love to photograph them if you haven’t already noticed.
These icy pops are super simple to make and are dairy free, gluten free and added sugar free – perfect for everybody and not just those people looking for alternatives for healthy living. It is also a great recipe to make with kids and teach them that treats don’t have to be bad!
I finally made time to experiment with this recipe when I was inspired by Michelle from Lucky Pops who I worked with at a recent event. Michelle is the creative mind who handcrafts gourmet popsicles which showcase unique and memorable flavours and contain no additives. Each treat is made from only the goodness of real fruit, herbs and spices. My kinda thing! Excited to work with her in the future.
So off I set, roasting and freezing so that I would be all set to shoot these in the golden hour, just after sunrise. A funny time to have icy pops, but the stormy early morning light is my favourite and I love the feeling the shadows and highlights evoke. As I finish writing this, it is exactly 13 hours later, and that cup of chai has been replaced by a frozen treat – roasted strawberry, coconut and lime. I am already thinking about the next flavour combination as this one worked out so well. I promised my friend Adam that I would save one for him so I had better not have another one tonight!

Makes approximately 9 icy pops (600ml / 20oz total mold capacity)
2 heaped cups of strawberries, hulled and halved
1 teaspoon corn flour (corn starch)
Icy Pop Base
3/4 cup coconut milk
3/4 cup coconut water
1/2 cup coconut cream
juice of half a lime
Icy Pop molds (600ml / 20oz capacity. Double the recipe if you have larger or more molds to fill)
Preheat the oven to 200 C (400 F). Place the hulled and halved strawberries in a baking tray. (If the strawberries are large, you may need to quarter them). Lightly dust them with corn flour using a sifter, make sure there are no clumps of corn flour. Roast the strawberries for 30 minutes or until the juice is slightly caramelised. Remove and allow to cool.
In a blender, add the coconut milk, coconut cream, coconut water, lime juice and half of the roasted strawberries. Blend until smooth. Divide the remaining roasted strawberries between each icy pop mold. Pour the blended coconut mixture into each icy pop mold to fill. Freeze overnight.
If you have excess, store it in an airtight container in the fridge until your icy pops have set over night. Take the icy pops from the molds and store in an airtight container in the freezer, layering with baking paper in between pops to make sure they don’t stick together.
